Margarita Chicken

A few months ago (whilst still living in Canada) my mum and I were having a nice, relaxing evening, we were enjoying a glass of wine with some yummy food. It was one of those nights where we decided to eat ‘tapas’ style. One of our dishes was another of Chef Andre’s scrumptious creations ‘Margarita Prawns‘. Needless to say, as with anything Chef Andre makes, the prawns were absolutely divine.

The next night, we were having people over and with the ingredients we used for the prawns still in my fridge and bursting with flavor, we decided to play around with this tasty recipe and change it up a bit for a bit of variety. This resulted in ‘Margarita Chicken’ and it was equally as good as the prawns and enjoyed by everyone. So, as with anything great we manage to prepare, we wanted to share. These recipes are great for summer or those cool, crisp fall nights I am now enjoying in Australia. So, Northern Hemisphere friends take this recipe and dine Al fresco whilst we in the Southern Hemisphere will enjoy under our deck heathers.

Margarita Chicken

1/4 cup chopped fresh cilantro

2 cloves garlic, minced

2 tbsp tequila

1 tbsp olive oil

1 lime (for zest and juice)

1/8 tsp cayenne pepper

1/4 tsp salt

1/4 tsp freshly ground pepper

1 lb large shrimp, shelled and deveined

Method: In a large bowl, combine cilantro, garlic, tequila, oil, lime zest, lime juice, cayenne pepper, salt, and pepper. Add the shrimp, tossing to coat. Set aside to marinate for at least 30 minutes at room temperature or for up to 4 hours in the refrigerator.

Preheat grill. Grill the shrimp 6 inches from the heat, turning once, for 3 minutes, or until just opaque.

Serves 4

In August GetRealLive  partnered with Hope Global and Sevenly to raise $21, 000 for the purpose of building homes for orphans in Rwanda.

Chef Andre Stops By to Help Us With Father’s Day Menus

Today on GetRealLive we had our favorite Chef, Andre Carthen drop in and help us figure out a great Father’s Day Menu. This helped me out a lot because my hubby, who is a total foodie, decided that since the Japanese Restaurant of his choice isn’t open this Sunday…. he would like to eat at home. When he said this I instantly thought, “I have to talk to Andre’. How was I ever going to please my hubby’s extraordinary palate with some of the ‘norms’ that I have been creating. I needed to pull out the gold and dazzle him with some new and exciting treats that would stimulate any seasoned and knowledgeable foodie.

So, with Andre in the mix I have a few options that I know will please my hubby. Also, these are things the kids can get involved in, which is really fun. Below are a few suggestions for Father’s Day and other events. To hear more, click on the media player and listen to today’s show:

Mini Cheese Cakes * Pulled Pork Sliders * Roasted Red Pepper Soup * Mini Chipoltle Cupcakes

These are just some of the ideas that Andre shared with us. Additionally, because my hubby loves shell fish we will have a crab and lobster fiesta happening throughout the day. I asked Andre for some new and exciting sides for our shellfish and he suggested a curried coleslaw with sun raisins. Ooooohhhhh Good!

Needless to say, the panic I was experiencing when my hubby first suggested Father’s Day lunch at home has now subsided. A conversation with Andre on GetRealLive always makes a difference. I am now armed and ready to create a Father’s Day to remember but first I’m hosting a ‘Mumma Needs Wine Night’ this Thursday. This night is all about us Mum’s celebrating the end of the school year, who knows maybe we will sit around a firepit and burn brown paper lunch bags in celebration (just kidding but not a bad idea). Then on Friday night I have 13 – 11 year old boys at my house for a Paintball/Sleepover Birthday for my son. What next? Oh yes, the following weekend we have my 7 year old’s Art Birthday Party………

All I can say today is THANK THE LORD ALMIGHTY for my Friend and Go to Man when it comes to Food and Entertaining, CHEF ANDRE CARTHEN.

Mother’s Day Brunch Idea…. Veggie Baked Eggs

Okay friends  Mother’s Day is almost here…. So beautiful, a day to celebrate the amazing women in our lives. I for one will be celebrating my mother and her input into my life.

Many of you may have already made reservations or have decided what you’re doing for the day. However, for those of you who haven’t made plans yet and are looking for something delicious to treat mum with GetRealLive has the perfect suggestion….

Thanks to GetRealLive Expert and Kathy Ireland’s go to man when it comes food and entertaining, Chef Andre Carthen, we not only have his recipe but we have made our very own video on GetRealLiveTV for you to watch. These eggs are simply scrumptious and super simple to make. Get the kids involved and treat mum to breakfast in bed (say good-bye to cold toast and luke warm coffee and hello to gourmet in minutes) or a delicious brunch on the deck. We promise she will thank you.

Veggie Baked Eggs

2 tbsp sweet onion thinly sliced

4 mushrooms, thinly sliced

2 tbsp chopped red bell pepper

1 tsp thyme

¼ tsp paprika

¼ tsp garlic powder

4 tbsp parmesan cheese or a low-fat cheese of choice

4 eggs salt pepper

Italian parsley, chopped Cooking spray – butter flavor

Method:

Preheat oven to 325ºF Spray 4 muffin tins. Combine veggies and season with thyme, paprika and garlic powder. Place equal amounts of vegetables in each tin, top each one with 1 tbsp of the cheese. Break egg into each dish. Sprinkle lightly with salt, and pepper. Bake, uncovered, until eggs are set to your liking (15 – 18 minutes). Sprinkle with parsley before serving. Serves 4

Easter Lunch/Brunch Ideas from Chef Andre Carthen

In March we hosted Celebrity Chef, Andre Carthen in Calgary at our GetRealLive Kitchen Edition Live Event. Andre is Kathy Ireland’s World Wide Brand Ambassador and most recently worked with Janet Jackson on her book ‘True You’.

At the event out guests were treated to a welcome drink, an opening dance number, great live music, amazing giveaways and samplings of Chef Andre’s scrumptious food. Andre dazzled us with his culinary brilliance and offered simple, healthy solutions for people on the go.

As with everything at GetRealLive we believe that everything tastes, feels and works better when shared. So, with Easter around the corner, we thought Andre’s recipes were the perfect thing to share. If you are looking for something that says Easter Brunch then this is your answer. If you simply want to impress your family & friends, these recipes will do the trick. Or perhaps  you are time strapped but want the goodness of a great meal ~ if so, then these are for you.

Andre’s food is simple but never compromises on flavour and health benefits, throughout every dish there is goodness weaved through providing something for every palate. Enjoy and share and know that as with everything GetRealLive these recipes have been tried and tested in our own homes.

Veggie Baked Eggs

California Citrus Salad

3 medium Oranges

2 medium Pink Grapefruit

1 medium white Grapefruit

1 cup sliced strawberries

2 tbsp. Honey 2 tbsp

Raspberry Vinegar

6 sprigs Fresh mint for garnish

Method:

Zest the rind of the two oranges. Set aside. Peel, section, and seed the oranges and grapefruits, removing white membrane. Set section aside. In a large bowl mix honey and , raspberry vinegar. Toss with orange, grapefruit sections and sliced strawberry. Top with sprigs of fresh mint for garnish. Serves: 6

Strawberry Spinach Salad

1cup fresh strawberries sliced

bunch of spinach, washed thoroughly

3 tbsp Balsamic vinegar

olive oil

Method:

In a bowl place strawberries and balsamic vinegar, allow to marinate for about 15 minutes. Wash spinach thoroughly. Drain the vinegar from the strawberries and use this vinegar to make your vinaigrette. Toss the strawberries and spinach and the vinaigrette and serve. Strawberry Balsamic Vinaigrette: 2 tbsp. olive oil 3 tbsp. balsamic vinegar (from the strawberries) ¼ tsp. crushed garlic ¼ tsp. dried oregano Salt and pepper to taste. Save a little dressing for another day Serves

Zesty Red Bell Pepper Soup

4 red bell peppers, seeded and chopped

1 large onion, chopped

4 tbsp. olive oil

2 garlic cloves, crushed

3 tbsp. tomato paste

3 ½ cups vegetable stock

2 tsp. dried cilantro

1 tsp smoked paprika

Salt and ground black pepper

Cilantro leaves to garnish

Method:

In a large saucepan, cook peppers and onion gently in the oil for about 5 minutes, stirring occasionally. Stir in the garlic, dried cilantro, paprika and tomato paste. Add in half the stock, bring to a boil. Cover the pan, lower the heat and simmer for 10 minutes. Puree the mixture in a food processor or blender. Return to the pan; add the remaining stock for desired consistency, season with salt and pepper. Bring soup back to a boil, allow to heat through. Garnish with cilantro leaves Serves 4

Roasted Herb Nuts

2 tbsp olive oil

1/2 lb mixed raw nuts

3 sprigs of fresh rosemary, chopped finely

pinch garlic powder

pinch cumin

1½ teaspoons coarse salt

Method:

In a large sauté pan, heat olive oil over medium-high heat. Add nuts, rosemary and seasonings and toss to coat well, heat through about 2-3 minutes. Place on paper towel to shake off extra oil or seasonings.
